Our artisan Lacto-fermented foods are hand-crafted in small batches in Blue Hill, Maine. They are unpasteurized and made without sugar, vinegar or whey. They are raw and alive and packed with flavor, probiotics and vitamins. All ferments should be refrigerated at all times.

We also grow a tremendous variety of fresh produce, berries and fruit during the summer growing season. You can find us at the Blue Hill Farmers Market or pre-order on line to pickup at the farm or at the market.

In addition to all of this we have created our own version of beeswax food wraps that can help eliminate the use of plastic wrap for food storage. Our BeeGreen food wraps are made with organic ingredients, they are washable, reusable and compostable. We use them at home and they last for years .

Backstage Farm is Certified Naturally Grown https://www.naturallygrown.org/

Certified Naturally Grown(CNG) farmers, just like Certified Organic farmers do not use synthetic fertilizers, pesticides, herbicides, or GMOs. The main difference between CNG and certified organic is that our certification model relies on peer inspections, transparency, and direct relationships with other producers and our customers

What is Lacto-Fermentation?

“Fermentation is everywhere, always.

It is an everyday miracle.”

Sandor Katz

Food fermentation is the process of breaking down carbs — such as starch and sugar in food — into “fermented food products” with desirable flavors, aromas, or textures.

In addition to yogurt, pickles, sauerkraut and kimchi, there is also chocolate, coffee, kombucha, kefir and many, many more products that are made with fermentation. Chances are you consumed something today that was fermented. Lacto-fermentation is the oldest and safest form of food preservation in the world.  It involves only salt, water and vegetables. The salt water brine creates an anaerobic environment (free of oxygen) where only lactobacillus bacteria can survive. The lactobacillus bacteria act as a preservative, keeping harmful bacteria from living in the ferment.

There are many health benefits of lacto-fermented food:

  • They help digest our food. The bacteria in fermented foods break down the food we eat, so our bodies can more easily absorb the nutrients in our food. The better digestion helps us to eliminate better and to reduce the chance of constipation and diarrhea.

  • Lacto-fermented food Increases our immune function. Up to 80% of our immune system is found in our gut. Eating fermented foods adds good bacteria to our guts to help maintain the balance we need for a healthy immune system.

  • Eating fermented foods can increase our energy because the bacteria in our guts is allowing  more vitamins and minerals to be absorbed and used by our bodies.

  • Lacto-fermented food consumption can reduce brain fog, anxiety, moodiness and depression.

And besides all of these benefits Lacto-fermented foods are delicious.
